You know those days when you really have a sweet tooth, but you don’t wanna spend too much time in the kitchen? And of course, you still don’t want to take a shortcut and buy those heavily processed sweets in a store. Well, then this is a recipe for you.
One of the ingredients is already revealed in the title – hazelnuts. But that’s only because hazelnut butter is what I had at home at the given moment. 🙂 Bear in mind that this recipe will work with any nut butter you like or have at home.
You will need
- 1 cup rolled oats
- 2 full tbsp hazelnut butter (or other nut butter you like)
- 10-12 fresh raw dates
How to make
Put the rolled oats in a food processor and pulse until they’re coarsely ground (no need to turn them into flour). Add pitted and peeled dates and hazelnut butter. Blend everything until combined. Easy-peasy!
The mixture will look crumbly, but it should be able to form into a ball. Take a bit of the mass in your hands and try whether it will stick together. If not, add 1-2 tbsp of water, process, and try again.
Form the balls and you’re good to go. You can chill them in the fridge before serving, but you don’t have to. I know I didn’t.
Tips and tricks
- There’s no need to soak the dates. But if they’re a bit dry, you can soak them in hot water for 2-3 minutes.
- This recipe is super-modular. As I already mentioned, you can use any nut butter you have. But you can also add cocoa, shredded coconut, or dried fruit of your choice. You can also decorate the balls by rolling them into cocoa, coarsely chopped hazelnuts, shredded coconut… Feel free to experiment.
- You can use the same mixture as a cheesecake crust.
